Breakfast: I made some Maté tea this morning with a little Coconut Milk. No breakfast today. We are going to meet my brother’s family at my mom’s house and go to lunch.
Lunch: After doing a big shopping for Mom, Gary and I unloaded her groceries at her house. Then we went to P.F. Chang’s for lunch. We ordered three Edamame appetizers to share. I requested no salt on the one for me and Gary. NO SALT! They were kind of soggy but they had good flavor.
Gary ordered the Ma Po Tofu. He liked the Broccoli and Brown Rice, the Tofu not so much.
I always have the Buddha’s Feast with Carrots, Broccoli, Asparagus, Pea Pods, Shiitake Mushroom, Five Spice Tofu and a special sauce. I always ask for sauce on the side. My dish came with no mushrooms and the tofu was swimming in the salty sauce. This was not good. The server was very helpful and promised to bring me a new plate. She brought two! Now we truly had a Buddha’s Feast. I ate my one dish with Brown Rice which was plenty. The rest went home with mom.
Dinner: It was late when we got home and we were ready to eat. We pulled out the leftovers from yesterday: No-Egg French Omelette with Baked Home Fries.
Next we set out some Celery Stalks, a mixture of Berries, sliced Apples, Almond Ricotta, Apricot Butter, Peanut Butter and Sesame Butter.
Look what I made. The flavors were unbelievably good.
