What Vegans Eat – Day 1433

First Meal: A few days ago I bought a Pineapple. I can’t believe it lasted this long but now I was ready to devour it. I had some for my “breakfast” after noon.

 
Second Meal: I was looking forward to finishing the rest of the Tempeh and Purple Sweet Potato Soup I made yesterday. It’s incredibly good.

 
I had made too much when I cooked the Steel Cut Oats yesterday at Mom’s. I knew she wouldn’t eat it so I took it home. After my soup, I unmolded it and iced it with Apricot Butter. What a treat!

 
Third Meal: Late in the evening I was CRAVING salad. Feed me salad! I made a big bowl (5 cups) tossed with Raspberries, Celery, Red Onions and Balsamic Tahini Dressing.
