What Vegans Eat – Day 1439

First Meal: It’s my fifth day on the Euphebe Plant-Based Program. It’s been an interesting journey for someone who likes to cook and prepare one’s own meals. As I mentioned when I started this plan, I am not the ideal person for it but it’s fascinating to try it out. On this plan, you are own your own for breakfast. This is where I get to be creative. I wanted fruit, lots of fruit. I think it’s because there is more salt in this plan then I am used to eating and as a result, I want to hydrate more and flush it out. I was about to open a new container of Soy Milk (just organic soy beans and water, folks, nothing else) and I had an idea. Let’s make Hemp Milk today. Better yet, make it Oatmeal Hemp Milk. I can’t say I have every made this combination before and now seemed like the best time. I took 1/2 cup of organic Hemp Seeds with a half a cup of organic Rolled Oats and blended them with my super pure distilled water. I added a little vanilla extract to that and there was my Oatmeal Hemp Milk.

 
It was thick and creamy and perfect on my bowl of organic Rolled Oats, organic Blueberries, Cherries, organic Bananas and organic ground Flax Seeds. Notice how I am using the word organic all the time. At home, almost all of our food is organic. The only time it isn’t is when we go to a restaurant or the rare moment when I am trying a food plan, like this week. Eating organic is important for so many reasons so I am going to take the time to type it out for every food ingredient that is worthy.

 
Eating organic supports individual health and the health of the planet. It’s not all about you. It’s about all of us together. The farm help that sprays the toxic chemicals on our crops have higher rates of chronic diseases like cancer as well as greater birth defects in their children. These toxic chemicals used in “conventional” industrial farming are destroying the water, the air and the soil. What else is there to poison? That’s just about all we’ve got! We are not a well-to-do family financially, but we have priorities and choose healthy, quality food over everything. This brings a wealth of joy. We are citizens, not consumers, who care about every living thing on the planet. We are for REAL (Responsible Eating And Living). Are you for REAL?
 
Second Meal: My Euphebe lunch today is the Hippy Brunch Burrito with Tofu, Sweet Potato, Onions, Red Bell Pepper, Baby Spinach, Black Beans, Coconut Oil, Chili Powder, Cumin, Tumeric and a Whole Wheat Tortilla. It came with a Green Salsa that I forgot to serve it with. I’ll use that this evening with my dinner. Burritos are fun and easy to eat. After removing the foil packaging, I put it on a baking dish and warmed it up in the oven until it was hot. I don’t recommend eating and working at the same time but when you have to, the burrito is the way to go. I worked and took tasty bite after bite until it was gone.

 
Snack: One thing I am doing this week is reading Dean Ornish, MD and Anne Ornish’s new book, Undo It!: How Simple Lifestyle Changes Can Reverse Most Chronic Diseases. They will be on the It’s All About Food show this Tuesday along with Euphebe founder, Nadja Pinnavaia. With the salty feeling in my mouth, I cleansed it with sliced organic Oranges.

 
Third Meal: Tonight, those of on this week’s Euphebe plan are having the Lentil Veggie Burger and Roasted Veggies. Everyone loves a good burger and this one has lots of flavor and a good chewy texture. It’s made with Oats, Water, Onion, Carrots, Cabbage, Lentils, Garlic, Olive Oil, Basil, Cumin, Sea Salt and Black Pepper. The thing I think people love about burgers is all the things that go with it, the bread, the sautéed onions and mushrooms, and the schmears – like mayo, ketchup and mustard. On its own this burger was tasty, but I will admit, I was glad I forgot to use the Green Salsa at lunch. I spread it on my burger and I liked it even better. The Roasted Veggies had Carrots, Zucchini, Cauliflower, Turnips, Olive Oil, Sea Salt, Red Chili Flakes, Dried Oregano, Dried Basil and Black Pepper. Roasted veggies don’t get enough attention in my opinion. They are always yummy.

 
Smoothie: I have not been hungry on the Euphebe plan, which has surprised me. Each meal never seems like a lot of food but after I eat it I am satisfied. That’s the funny thing about getting the nutrients your body needs. Well, it’s not funny actually. It’s truth! I was working late (surprise!) and was drinking more water than I normally do. I have not been eating late but I decided to make a smoothie, with my new organic Oatmeal/Hemp Milk, an organic Banana and organic frozen Strawberries.
