What Vegans Eat – Day 1438

First Meal: There’s an audition at the Actor’s Equity New York Audition Center that I planned on going to. This means I have to get up early, get over there and get an audition appointment. I’ve been lucky the last few weeks getting an audition time shortly after showing up so I don’t have to stay and wait. I thought today might be one of those days since it was a cold Monday with fresh snow on the ground. I made a big smoothie for breakfast with 5 ounces of Power Greens, a Banana, Blueberries, Peanut Butter, Celery, Carrots and Water. I sipped and chewed about a third of it, saving the rest for later in the refrigerator. I also made a pot of Chai tea to drink and bring to the audition.

 
I left the apartment later than I intended to. The subway was crowded and moved along very slowly. A very nice woman sat down beside me and we chatted about all kinds of things – why we wouldn’t want to climb Mt. Everest or why anyone would want to spend $100,000 to reserve a one-way ticket to Mars. We shared our cancer stories and that led me to talking about food. Of course it did! Then she told me she was doing the Daniel’s Fast along with her church community. She explained that she was not eating meat or dairy, and instead eating lentils and yucca. I gave her my card and told her if she had any questions about eating plant-based, I was there for her.
 
When I arrived at the audition center my heart sank. It was mobbed with people. I may have been cold outside but the temperature was hot inside from body heat, especially all the dancers in their tights moving around before their auditions. There were no more audition slots available. I was put on the alternate list, #81. They were already at #23 on the list. I calculated that at the rate they were going I had time to go home for lunch and do a vocal warm up.
 
Second Meal:
When I got home, I made my Euphebe Lunch, Tomato and Cannellini Bean Soup. It had Cannellini Beans, Tomato Sauce, Crushed Tomatoes, Onions, Carrots, Baby Spinach, Vegetable Broth, Garlic Lemon Juice, Olive Oil, Bay Leaves, Black Pepper, Sage, Cumin and Sea Salt.

 
I was feeling hungry and I had more of the Green Smoothie I had prepped this morning.

 
Still feeling bottomless I warmed up the Garbanzo Bean Crepe with Brussels Sprouts and Cherries I had made and frozen a couple of days ago.

 
Third Meal:
I got back on the subway to go to the audition center. I had calculated correctly. They were on #63 of the alternate list when I arrived and it didn’t take long to get to my number. In no time, I was lined up to have my less than 5-minute audition. Then it was back on the subway to go home. I warmed up my Euphebe dinner, Chickpea and Maitake Tacos made with Cashew Cream, Onions, Chickpeas, Poblano Peppers, Baby Spinach, Garlic, Olive Oil and Sea Salt. I love Maitake Mushrooms and this meal was a good one.

 
After dinner I was free to do what I wanted. I did my Duolingo Spanish lessons and then painted the kitchen ceiling! Second coat coming soon.
