What Vegans Eat – Day 1445

First Meal: I had a lot of plans for today but I am moving slowly. Maybe I’ll put a few things off for another day. I made easy Cold Rolled Oats with Soy Milk, Raspberries, Walnuts, Raisins.

 
Second Meal: I’ve got a late evening planned today. I’ll be going upstate to see my niece perform Pugsley in her school’s production of the Addams Family. I made a big, satisfying lunch of Butternut Squash, Arugula, with Red Onions and Walnuts, Sliced Tomatoes and a bowl of Black Beans and Cashew Cheese Spread.

 
Third Meal: I met my brother, sister-in-law and nephew at their home and we drove to a little local pizza place. I ordered a side dish of Broccoli Rabe. I wasn’t that hungry. It was perfect, really good.

 
Fourth Meal: My niece was wonderful! I was so proud of her. We went back to their house and I had a cup of Vanilla Almond Rooibos tea. Then I drove back home. It’s about a 75-minute drive in no traffic. I spent about 30 minutes looking for a spot before heading to a nearby parking lot to pay to park my car. Back in the apartment, I made myself a late night snack of Guacamole and Red Bell Peppers while I spoke to Gary on the phone and caught up on his day in California.
