What Vegans Eat – Day 1446


I ate late last night. I like to wait at least 12 hours after my last meal before having my first meals of the next day. But I was hungry, so I ate at noon, only an 11-hour fast. It happens sometimes. No judgement. I made a big Arugula Salad with Butternut Squash and toasted Butternut Squash Seeds, Raspberries, Onions and Balsamic Vinegar. Eat the rainbow!

I was multi-tasking all day, taking calls and tidying up. During one of the calls I made Millet Avocado Maki. I was rolling! Hahaha!

I met my friend Linda at the Metropolitan Opera where we had tickets to see Adriana Lecouvreur. It was very fine. The lead singers all were excellent. It ran from 8pm until 11:15pm. The time passed quickly because it was such a well done production. I came home and I had to have something. Rolled Oats to the rescue. I had them with Raspberries, Walnuts, Raisins and Soy Milk.
