What Vegans Eat – Day 1460

First Meal: The countdown is getting smaller. I leave in two days for California. My long to-do list is much shorter than it was 6 weeks ago when Gary left for California and I began to get some overdue projects done. Today I plan on cleaning the apartment. As Cinderella says in Into the Woods, “sometimes I actually enjoy cleaning.” I’ve been looking forward to this day! I began with laundry. The I warmed up the organic Purple Sweet Potato Soup with Carrots, Onions and Tofu for my first meal.

 
Snack: With the bathroom cleaned, I took a break to do some computer work I absolutely had to finish before dusting furniture and cleaning floors. When I got hungry I ate tow organic Apples. Apples have been my convenient, fast food lately.

 
Second Meal: An hour later I made an organic Green Salad with Raisins and Walnuts.

 
I treated myself to a pasta dish for dinner. My “pasta” was Spaghetti Squash and I repeated the dish I created a few days ago, cooking it with organic Red Onions, organic Tomatoes, organic Dried Basil, organic Porcini Mushroom Powder and water and adding in organic Almond Ricotta.
