What Vegans Eat – Day 150


Breakfast: Here is another REAL breakfast favorite of ours, cornbread this time fully loaded with blueberries, corn kernels and sunflower seeds, served with our favorite schmears, peanut butter and apricot butter.
Lunch: We called this Heavenly Salad because it is – with crunchy bean sprouts, Napa cabaage, scallions, cilantro and peanuts.
Daily Green Juice: Kale, Celery, Lemon, Carrots
Evening: I made a variation of my Peanut Chocolate Smoothie, using several kale leaves, soy milk instead of coconut milk and adding more peanuts and chocolate. It was thick, cool and satisfying.
