What Vegans Eat – Day 1525

First Meal: Today is a day of catching up on rest and work during this two-week birthday celebration period. We craved clean-eating: organic Yellow Split Pea Soup, organic Millet, organic Purple Sweet Potatoes and organic Sautéed Kale.

 
Second Meal: We finished up the Japanese Soufflé Pancakes I created this past weekend topped with an organic Apricot Butter and Tahini Spread.

 
Third Meal: Yellow Split Pea Soup is back in the evening for an easy, filling and satisfying meal.
