What Vegans Eat – Day 1552


First Meal: Buckwheat with Walnuts and Onions makes a great breakfast. It’s hearty and nutty.

Second Meal: This is a gorgeous and easy to put together soup, made with cooked Garbanzo Beans, a jar of strained Tomatoes, Onions and tender leaves of Kale.

I leave the Pears on the counter to ripen. I love when they get super soft, creamy and so sweet.

Third Meal: Cantaloupe on the piano. An appetizer towards the end of my voice practice before sitting down for dinner.

Steamed Cauliflower with a spicy Chipotle Tahini feels like a decadent treat.
