Baked Red Lentil “Salmon” Cakes

I was inspired to create this dish when I saw someone served a plate of grilled salmon. The color looked just like the red lentils I had cooked. Salmon is known to be rich in omega-3 fatty acids as are hemp seeds which gave me the idea to add them to this recipe. The result is clearly not salmon but it’s delicious.
 
Ingredients:
1 1/2 cups cooked red lentils
1 teaspoon Old Bay Spice (commercial brand or make your own)
1 tablespoon ground Nori (grind about 1/2 sheet in a spice grinder)
1 tablespoon hemp seeds, ground
 
Directions:
1. Preheat oven to 350oF
2. Combine the ingredients in a bowl.
3. Scoop into three individual baking dishes
4. Bake for 45 minutes to 1 hour.
5. Serve immediately
