What Vegans Eat – Day 1556

First Meal: Organic Mandarin Oranges are a refreshing bit of juicy sunshine. I had one with my morning Maté. I had to move quickly, no time for sitting and eating. I was delivering three sets of dishes to my friend Janet. Service for Thirtysix! I used to use them here in the house for vegan dinner events. Tomorrow I’ll be receiving 34 boxes of treasures from Gary’s mom that he packed up in the last couple of months. It’s out with the old and in with the “new” old!

 
Second Meal: After mom’s emergency yesterday with the gas stove I decided I would see her today and take care of a few things. She was going out to lunch with her friends and it would be easier for me to get stuff done without her in the house. I set up more security cameras around the house to keep an eye on her. I ordered new knobs for the JennAir stove. Buyer beware! These are the flimsiest pieces of crap ever and they are expensive to replace. I have replaced them once before and in clearing out my dad’s desk I see he also replaced them when he was alive. Meanwhile, I heavily taped the area with the missing knob so that the gas is not turned on there by mistake. While working around the house I made a bowl of fresh Strawberries and Walnuts to munch on. I was hungry but had little time to eat if I wanted to finished before she came home.

 
Third Meal: My mom’s lovely neighbor Laurie came by and helped me pulled out the stove so we good turn the gas back on. With everything back in order I invited mom and Laurie out to P.F. Chang’s for dinner. First some Edamame, no salt please!

 
I ordered the Thai Vegetable Curry. I have never ordered this because it always sounded heavy with a rich coconut sauce. Today, I need calories, fast. It was delicious and I savored every bite.

 
My curry came with Brown Rice. I haven’t eaten much rice lately. I enjoyed it.
