What Vegans Eat – Day 1561

First Meal: Gary arrived this morning on a red eye flight from California. He’s been gone for five months, except for one 3-week visit home in April. He arrived and got to see all of the 34 boxes he shipped home, piled neatly in the foyer space. He seemed pleased with the homes I found for the few boxes I had opened. He went to sleep. I had an organic Banana.

 
Second Meal: I couldn’t sleep so I decided to make something special. I prepared Staffordshire Oatcakes for our brunch whenever Gary would wake up. I new Gary would like his with a sweet spread so I made organic Apricot Butter. Really, it’s the simplest thing to make and so yummy. I prepped organic Rec Onions, organic Tomatoes and Avocados for my toppings. We each had a half of an organic Ruby Red Grapefruit. I made organic Maté for me and organic Teeccino for Gary. I made my first batch of organic Soy Milk today too. It’s going to take a while to prefect this but I am inspired to do the work.

 
This is my “bagel with creamcheese”.

 
Snack: For a quick, hydrating snack we had organic Manadarin Oranges.

 
The weather is wonderful today and Gary was ready to get moving. We took a walk around Forest Hills. We were delighted and surprised to discover the Forest Hills Biergarten in our neighborhood. I insisted we stop in for a beer. It’s Gary’s birthday week and time to start celebrating! They had Hofbrau beers on tap which are vegan-friendly.

 
Third Meal: It’s nice to have Gary home. He made dinner! He put together a big plate of Baked Tofu, Guacamole, Red Cabbage, Buckwheat, Pinto Beans, Tomatoes and Corn Tortillas – all organic.

 
We’ll be celebrating for the next two weeks. I took out the box of Sjaak’s chocolates that I was gifted at the Vegetarian House in San Jose last month. We each had a few chews.
