What Vegans Eat – Day 1592

First Meal: We are off on an adventure! Our cousin Jared is getting married! Actually, Jared is my brother’s wife’s cousin but we love him so much he is family. He and his wife-to-be, Jennie chose to get married at the Cristman Barn in Ilion, NY, about a 4-5 hour drive from here. A month ago Gary and I got this idea to travel by train. We are excited. Today’s the day. Gary packed lots of good food for the road and I made a big thermos of Chai Tea. Before we left, we had Rolled Oats (I bought a new supply) with Flax Seeds. Walnuts, Pears, Blueberries, Coconut and Soy Milk, all organic.

 
The wedding is planned to be Vegetarian and Vegan. I was asked to bring vegan/gluten-free cupcakes. I would have made them but thought it would be better for many reasons to get them from Erin McKenna’s on the lower east side. We ordered Red Velvet, Carrot, Vanilla and Brownie flavors with Vanilla and Chocolate frostings. We brought our luggage on the subway and picked up the cupcakes at the bakery. The frosting came separately and I stored them in an insulated bag with ice packs. Then we got back on the subway to go to Penn Station.
 
When we got our Amtrak tickets I signed up for an Amtrak credit card. With it came a pass to the special waiting room at Penn Station. We settled in and had some of our tea. This is fun!

 
Second Meal:
We got there very early, lunchtime arrived before we left. We took out the Baked Tofu, Guacamole, and Celery and Carrot sticks to munch on.

 
A little while later on the train, I made sandwiches, with organic Corn Tortillas.

 
Snacks:
There were electrical outlets so I could get some work done. This train ride is fabulous! It’s comfortable and the view is spectacular. We ate organic Apples for snacks.

 
We arrived in Utica and took a Lyft to our hotel. Then we got outside to discover. The restaurants did not look very inspiring. We decided on Tavolo for beer.

 
Our server was so nice and helpful, she talked us into getting a vegan pizza! It was AWESOME.

 
Afterwards, we got this beautiful plate of Broccoli. We were not disappointed.
