First Meal: This may look like an ordinary bowl of Rolled Oats but it is not. It’s the LAST 1/2 cup of oats in the house. I was going to my mom’s house and had a lot of worked planned. I needed sustenance. Plus, I knew I would be food shopping and would refill our supplies. This bowl had Flax Seeds, Blueberries, Coconut and Soy Milk, all organic.
Second Meal: I nearly killed myself today. I was motivated to get many things done. First I went grocery shopping for me and Gary and also for my mom at Whole Foods. It’s on the way to mom’s house. She was going to lunch with her friends so it was a good time for me to get work done for her (without her asking me questions or insisting I stop). I cleaned her house. Not all of it, but most of the downstairs. I was on my hands and knees for hours with a bucket and a sponge, repeating Sondheim’s Cinderella’s line in my head, “sometimes I actually enjoy cleaning”. When Mom came home I tried to keep going but it was hard. She wanted me to relax and rest. I will finish next week. While she sat, I made her a giant pot of soup with Potatoes, Onions, Garlic, Carrots, frozen Mediterranean Style vegetables and frozen Mushrooms, all organic. I added the last bottle of beer in her pantry to the water plus Turmeric, Herbes de Provence and extra Basil. It’s a good soup. I also made her a big pot of brown rice. Everything was stored in small containers in the freezer and refrigerator and should last a while.
When I got home, Gary had been working overtime too. Now he was cooking, preparing for our trip upstate this weekend by train. He made this gorgeous lasagna with Brown Rice Noodles. Almond Ricotta and Marinara with Tempeh. I couldn’t wait to dig into that!
There is my slice of heaven, served with a cool, Green Juice.
Third Meal: For a refreshing, late night dessert we had organic Cantaloupe. They were on sale at Whole Foods!
