What Vegans Eat – Day 1600


First Meal: I have gone over in my head how this day is going to go and already things are going wrong. There was a lot of traffic driving to mom’s. My brother lives further away and he’s late with even more traffic all along the way. I sit with mom and her neighbor Laurie as we cool off with Watermelon.

Second Meal: My brother and I brought the sofa bed, filing cabinet and desk down from the office to the garage. I’ll spare the details but it was complicated and there was a lot of sweat involved. Did I mention it’s hot outside? The AC is on but it’s still hot. Then my brother put together a full size bed frame from a set that was once his children’s crib. It’s a cool concept. We were ready to rest and eat. I suggested going to Plant Wise. I got my favorite the Half Bowl Half Salad meal with Chickpea Masala with Tomato, Falafels, Sunflower Tahini and Kale Caesar Salad (Veggie Tuna (Chickpeas, Celery, Broccoli, Red Onion,
Sunflower Dijonaise), Kale, Carrots, Almonds, Cranberries.).

Mom likes the Egg Wise Wrap with Roasted Tofu in a Dijon Maple Glaze, Roasted Tomatoes, Avocado Mash, Quinoa, and Sunflower Dressing.

My brother had the Chili with a Greek Salad (Spinach, Tomato, Cucumber, Red Onion, Kalamata Olives, Lemon Sunflower Tzatziki.) There were lots of olives!

Dessert: I stayed a little longer to clean things up before leaving mom’s house. I was gifted a parking space by the gods when I drove home. I deserved a treat! I made a Mix Berry Soft Serve with Tahini, Banana, Soy Milk and Vanilla extract. Gary had made a lot of savory foods that I wasn’t ready for tonight but I knew I’d be happy to eat tomorrow.
