What Vegans Eat – Day 1616

Green Juice: And the work begins. Our daytime workshop starts at 10am and ends at 4pm. We were up early, on New York time and excited about the day. Gary had to print some things at Kinko’s. I drank a Green Juice while I waited.

 
First Meal: I brought along soaked organic Rolled Oats with organic Strawberries, organic Walnuts, organic Raisins and organic Soy Milk that I had made earlier in the morning. It’s surprisingly delicious when prepared this way.

 
Second Meal: Last night I made organic Wild Rice and a stew of organic Red Lentils, organic Celery, organic Carrots and organic Onions. I packed it up for lunch today. Normally we make our our Brown/Black/Red Rice blend but this Wild Rice mix from Whole Foods is excellent. I liked the sweet rice that was in it.

 
I also prepped a Kale Salad with Tomatoes. Gary’s cousin Nancy gave us fresh lemons from her tree which we will be using for our Tahini Dressing.

 
Third Meal: Gary was teaching an evening workshop and I was off so I met my friend Susan for dinner. She wanted to go to the Vegetarian House. Did I mind that I was just here yesterday? No! I recommended the Guru Curry.

 
I had the Spicy Mambo with Lion’s Mane Mushrooms.

 
Dessert:
I bought Gary a box of Sjaak’s chocolates and we had a few pieces when we both returned to the house.
