What Vegans Eat – Day 162


Breakfast: Just another super hot and humid July day in New York City. I am so grateful to have a terrace and be able to eat most of our meals outdoors! I called this breakfast a Trifle because Gary had prepared it in layers: apples, pears, raisins and cashews, then oats, then more apples, pears, raisins and cashews and then covered with plain soy milk. Each bit was perfection. It was served with Earl Grey Black tea.
Daily Green Juice: Kale, Celery, Lime, Carrots, Mint, Cilantro
Lunch: Soup and salad for lunch with leftover Creamy Lentil Roasted Vegetable Soup and a green salad with Little Seed Caesar Dressing.
Dinner: Black beans were quick soaked and made into soup with tomatoes, sautéed onions and bell peppers and served with an irresistible melty cashew cheese sauce with corn tortillas.
Evening: Yes, we do get cravings for sweet things. On this hot summer night, sliced oranges were the perfect treat.
