First Meal: The weekend is almost here, but since we are working on Saturday, it doesn’t mean much. We are up at 8am and had our Rolled Oats with Bananas, Blueberries, Strawberries, Figs and Soy Milk at the house.
Second Meal: Our lunch in the sun on “The Steps of the Palace” was an assortment of what I stuffed in a bag before leaving the house: Green Juice, Cherries, Red Lentil Plop.
For dessert we had Rice Crackers with Blueberry Jam and Peanut Butter.
Snack: We don’t have class on Friday evenings and we chose to eat in the house. I had soaked Black Beans and cooked them and Gary baked Purple Sweet Potatoes. Somehow, maybe because we were hungry we didn’t cook either of them long enough. I ate the Beans with Avocado and Red Onions. There were some overly chewy beans in the mix. I tried a Purple Sweet Potato too – dry and not sweet. It was undercooked. My plan is to cook the beans and sweet potatoes together in water tomorrow to remedy the situation.
More Snacks: We were invited to a party at the home of one of Gary’s former students, Shannon. She and her husband have a beautiful home in Saratoga with a gorgeous Pizza Oven in the back. While the kids swam in the pool, Shannon’s husband prepped the pizza oven as we chatted with the other guests and nibbled on hummus and crudites.
There was a cheese platter that thoughtfully included Miyoko’s vegan cheese.
They made a few vegan pizzas topped with Daiya. They were gorgeous!
I asked to make one without any cheese. Yum. This is fun!
