What Vegans Eat – Day 1619

First Meal: We were ready for breakfast this morning so I prepped our Rolled Oats with Soy Milk, Strawberries, Blueberries, Walnuts and Figs and brought it with us to the theater. We had time before class to eat outside.

 
Second Meal: Skipping lunch, I was super hungry when the day class ended and fueled up before the evening with some leftover Garden Crepe from yesterday.

 
I also had Red Lentil Plop, as we fondly call it. Last night,I had grated some Zucchini from Gary’s cousin Nancy’s garden and added minced garlic to it. My idea was to make Zucchini Corn Pancakes but then realized we had no parchment paper to bake them in the oven. Instead, I cooked them with Red Lentils and brought it along with me to day. It may not look like much but I love it.

 
Snack:
We went over to Whole Foods to grab some Green Juices and Cherries along with other groceries for later.

 
Third Meal: We are usually pretty hungry at night after class. It’s not good to eat late but we don’t sleep well if we are hungry. We had Kale Salad.

 
I had more Red Lentil Plop!
