What Vegans Eat – Day 1618


First Meal: And our routine starts again. Up at 8am, feeling a bit weary. I make us the all-organic bowl of Rolled Oats with Soy Milk, Blueberries, Bananas, Strawberries and Raisins. It’s delicious and I could eat this everyday.

Second Meal: Today on “The Steps of the Palace” Gary and I share a big, all-organic Kale Salad that I made this morning with Tomatoes and Tahini Dressing, stuffing big spoonfuls in organic Corn Tortillas.

Third Meal: I met my friend Deo for an early dinner. We sat in the fragrant garden at the Rosicrucian Museum opposite the theater to catch up and then went over to the Crepes Bistro. I know I said I would get the tofu scramble but I was in the mood for a crepe. We both got the Garden Crepe with roasted eggplant, tomatoes, olives, roasted bell­ peppers, and arugula with house­ made vegan pesto. Deo ordered an extra one to bring to her hard-working son Ocean.
