What Vegans Eat – Day 1628

First Meal: Gary’s cousin Nancy gave us Zucchini from her garden when we first arrived. I have been wanting to make Zucchini Corn Cakes ever since and finally got the chance.

 
They are yummy, especially with Tahini Dressing on top. We had a few. They are very filling.

 
Second Meal: Third time’s a charm. We are back at Pressed Juicery for Freeze. We didn’t even park and sit on a bench this time to enjoy them. We were on our way to the theatre to prepare for the evening Masterclass Showcase Performances.

 
Third Meal: It’s been a long day. The Showcase was wonderful. I was so proud of Gary and my students. They progressed so much in two short weeks! We got back to the house and celebrated with a late meal of homemade Zucchini Corn Cakes, Guacamole, Kale Salad and Beers. I had my favorite Samuel Smith’s Organic Chocolate Stout. I could only drink about half the bottle and will enjoy the rest another time.
