What Vegans Eat – Day 165


Breakfast: Gary was flying out early on a business trip. We both got less than four hours sleep. I thought I would get back to sleep when he left but it wasn’t possible. I struggled the rest of the day, thinking I would get a nap in and never did. The morning I grazed, with an apple, later a Raw Revolution bar. I made a pot of Genmaicha tea and let it cool. I sipped on it the rest of the day.
Lunch: Working in a fog most of the day I was grateful to have leftover black bean and corn soup ready to go. I ate it cold with a plop of melty cashew cheese sauce.
Daily Green Juice: Collards, Celery, Lime, Carrots, Ginger
Dinner: I finished up the remainder of what I ate for lunch: more bean and corn soup with the rest of the cashew cheese sauce. I was sorry to see it go.
