What Vegans Eat – Day 1665

First Meal: Yesterday, I successfully made homemade Soy milk, thanks to Miyoko’s Artisan Vegan Pantry cookbook which had the secret tip to get rid of the paint smell! Today we put it to the foam test. It passed. I topped my Yerba Mate with foamy Soy Milk and Cinnamon.

 
We toasted the failed Okara Blueberry Muffins from yesterday spread with Tahini. They were better today.

 
Second Meal: We made up for the bad muffins with excellent burgers. Gary knows how to make a burger plate. Isn’t this a beauty?

We ate outdoors on the terrace. It’s one of my favorite places to be. There was a jar of something frozen in the freezer that I had defrosted earlier in the day. I don’t know what it was but it smelled like a tasty broth. So I made a Shiitake Vegetable soup with it.

 
Treat: Our frozen soft serve treat today is Blueberries, Apricots and Acai.

 
Snack: Feeling hungry we had a late night snack of Celery and Peanut Butter.
