What Vegans Eat – Day 1684

Share

First Meal: I am staying in this lovely hotel right by the airport in San Jose, Costa Rica. My flight is at noon so I got up early to swim in the pool before leaving here. The outdoor pool here is gorgeous. I swam for about 45 minutes and then I got ready to leave. I peeled the rest of the Mamon Chino and ate them up.

Second Meal: At the airport I went hunting for food. I found the Teriyaki Experience and checked the menu out online. They offered some veggie meals but the sauce had preservatives and artificial ingredients. I asked for a plate of Veggies and Tofu and Rice with no sauce. It was good.

Third Meal: I had a stopover in Orlando and I was hungry again. I burned a lot of calories swimming this morning. On the Border Mexican Grill looked like it would have some options for me and it did. The server recommended the Border Bowl with a Grilled Portobello brushed with lime-Cilantro Chimichurri with Cilantro Lime Rice, Black Beans, Bell Peppers, Zucchini, Shredded Lettuce, Pico de Gallo and sliced Avocado. My belly was super satisfied. I am ready to get home.
