What Vegans Eat – Day 1685

First Meal: Frozen leftovers are gifts from you in the past. I love reaching into the freezer to see what Gary and I have left for us in the future. I took out Red Lentil Soup, Baked Tofu, Sweet Potatoes, Yellow Potatoes and Okara and put them in the refrigerator. I warmed up some of the Red Lentil Soup for breakfast.

 
I made a pot of Genmaicha Tea. It’s good to be back home. Home with my teas!

 
Second Meal: It was time to visit mom. I haven’t seen her in over a week. When I got there she made a big Salad for both of us with Garbanzo Beans, Tomatoes, Olives, Onions and Walnuts.

 
Mom always has lots of Bananas in the freezer. I made us some bowls of Strawberry Banana soft serve and froze three individual servings for mom to have later.

 
Third Meal: When I got back home, I rolled up my sleeves and made a modified version of Miyoko’s Vegan Crab Cakes from her Artisan Vegan Pantry cookbook. I didn’t have all the ingredients but I wanted to use the Okara I had defrosted. They came out pretty good, served with Potatoes and Red Cabbage Sauerkraut. It’s good to be home and it’s good to be cooking.
