What Vegans Eat – Day 1689

What have we got here? About twenty years ago I bought a neck pillow to bring on planes with me. It was filled with buckwheat hulls and was covered in organic cotton. I’ve used it many times and love that it is stuffed with a food-related material rather than something synthetic and toxic. I got it rather dirty when I was in Costa Rica. It was time to wash it. It is so well made that this was easy to do. I unzipped the cotton cover and unzipped the lining. I filled some jars with the hulls for safe keeping while I washed the rest. This morning I put it all together again, like new.

 
Morning snack: We finished up a grant request yesterday and this morning I walked it over to the post office, eating an apple along the way. This wasn’t breakfast, just a quick snack to keep me going.

 
First Meal: Today I went to visit mom. It was the usual routine. I reviewed the mail she had collected for me, I had her make us a big salad and I did the chopping to make her lots of soup. I call her every day to give her her vitamins and meds and came up with a new routine today. Trader Joe’s has a new 12-ounce organic green juice. I bought her six to have one every day along with a handful of walnuts. Plus, I am reminding her to eat about a cup of blueberries every day. We’ll see how it goes and if it helps her memory at all. We sat down for a Salad with Olives. Onions, Blueberries, Corn and Tomatoes with a side of mashed Sweet Potatoes.

 
Second Meal: Gary was at home making the advance version of Green Juice for us. It’s thick and bitter, made with Kale, Collards, Celery, Carrots, Lemon and Ginger. It puts hair on your chest! I took a long time to drink it, sipping it slowly.

 
Along with the juice I had a bowl of our Whole Grain Medley (Millet, Brown Rice, Red Rice, Black Rice) with a Red Lentil Cheesy Sauce Gary put together yesterday.

 
It’s my Red Lentil Day. I finished up a Red Lentil Soup I had made a few weeks ago and frozen. I added some Okara to thicken it up.

 
Third Meal: It’s party time. We went to the Coalition for Healthy School Food Annual Gala. We put on our finery and stepped out. It’s always fun to go to these vegan events and meet up with some of our favorite vegan peeps. We sampled lots of food from Marty’s V-Burger, Gone Pie, and many more. Say cheese! There was a huge cheese spread too. There are more and more new companies popping up making vegan cheese. Hurray! Treeline, Miyoko’s and Spread MMMs were there for the tasting. Our friend Linda Long was there volunteering, organizing the vegan cheese experience.

 
We went home with goodie bags that included Sea Snax and Raw Rev Glo Bars.

 
Snack: We had a fun night, but didn’t really feel satisfied. We tasted a lot of different things but came home hungry. I had a Gluten-free English Muffin with Miyoko’s Cultured Vegan Butter and Gary went with Rice Cakes and his favorite schmears, Peanut Butter and Apricot Butter.
