What Vegans Eat – Day 171


Breakfast: Can you believe I have not had oatmeal in a week? I had some with chopped apple, some dried figs, sunflower seeds, blueberries, a dash of cinnamon and nutmeg, and soy milk plus sliced oranges and green kukitcha tea.
Lunch: Sometimes you just have to have ice cream for lunch. And you can when it’s made with a frozen banana, frozen strawberries, a little soy milk and cocoa powder.
Dinner: There’s been an eggplant and an orange bell pepper patiently waiting in the refrigerator for me to attend to them. I made an amazing Many Vegetable Stir Fry.
