What Vegans Eat – Day 172


Breakfast: Heat and humidity dictate what I want to eat. I want food that is hydrating, cool, crunchy. This morning I had the remaining collards I had steamed and chilled earlier in the week. Celery stalks with peanut butter was the fun, main event along with iced green tea.
Lunch: Still wanting only cold food, I had a bowl of leftover Many Vegetable Stir Fry.
Dinner: I was hungry and then I wasn’t hungry. I blame the heat on my confusion. Instead of a meal, I grazed. I had a few mouthfuls of some more Many Vegetable Stir Fry but I didn’t want that. Later I had a small handful of raw cashews, then some orange slices and a Raw Revolution Bar.
Daily Green Juice: I finished the day with a chilled green juice. Earlier in the day I had made a new batch of green juice for the week. I filled 7 glass jars, each with 12 ounces of juice from 2 heads of Kale, 1 bunch Collards, 1 head of Celery, 6 Carrots, 2 large Lemons, and 2 inches of fresh Ginger. I love this juice. Adding a lot of fresh lemon really makes it delicious.
