First Meal: Oatmeal is back, and super colorful with Pumpkin Seeds and Blueberries served in this gorgeous dish.
We also added Pears, Flax Seeds and Coconut. It’s been a while since we’ve had this for breakfast. I’ve missed you, Oatmeal!
Second Meal: We are both fighting colds here at home. Nothing sounds better than brothy soup. Gary found the energy and motivation to make a Pho with Baked Tofu, Baby Bok Choy, Carrots, Onions and Rice Noodles plus a special ingredient: Squash Balls. The cooked Acorn Squash added a nice sweetness.
Third Meal: We’re supporting our immune system with a treat, probiotics from Forager’s Cashewgurt topped with lots of goodies: Raspberries, Pears, Coconut, Cacao Nibs and Dates.
