What Vegans Eat – Day 1728

Share

First Meal: A perfect breakfast! Parfaits. You know that parfait means perfect in French, right. Made with homemade Cashew Yogurt, Blueberries, Raspberries, Coconut, Cacao Nibs, Bananas, all organic. Mm. Served in Waterford crystal makes them even more delicious.

Second Meal: A lovely lunch came together with a fresh Kale Salad served with leftovers, Turnip Cakes and Scallion Pancakes, plus Miso Vegetable Soup and Cucumber Tzatziki Salad (made with homemade cashew yogurt).

It looks even better on the plate, served with homemade Sauerkraut.

Snacks:
We were invited to a book reading authored by my friend Bob Klitzman. His new book is called Designing Babies. It was hosted at the home of Bob’s college friend and medical writer, journalist and author Randi Epstein and her husband Steven. They have a lovely brownstone on the upper west side of Manhattan. They put out a big table of noshies and there was something for everyone, with everything labeled. There were vegan falafel and another vegan dish (something breaded and fried). I tried one falafel and drank a fabulous dirty martini. Gary had a beer. I look forward to reading the book!
