First Meal: I had an idea. It was not a good one. We call these EPIC FAILURES! I wanted to try making a waffle from cooked Oatmeal. We had some leftover Oatmeal in the refrigerator. I thought it might work like Smashed Baked Potato Waffles. Nope. They did not cook inside and burned slightly on the outside. I ate them anyway, they still tasted good. Gary went for Toast and Peanut Butter.
Second Meal: It’s Mother’s Day, the day I visit mom. She had a crown fall off and I took her to a dentist. We learned that she needs an oral surgeon to extract her tooth. Can you recommend one? I took her to Plant Wise for lunch afterwards. This time I chose correctly. Usually I order something that is very heavy and too filling. Today I selected the Quinoa Salad with Arugula and Guacamole. It was perfect and didn’t lay in my belly.
Mom likes the Egg-Wise Wrap, made with Tofu. She ate half and took the rest home. She insisted that we get something for Gary too. I got his the Falafel Hummus wrap that he would have later for dinner.
Third Meal: While Gary had the meal I brought him I ate a small meal of Leftover Broccolini and a Baked Potato topped with Cashew Yogurt and Scallions.
Green Juice: In the evening we sipped on Green Juices made with Kale, Collards, Celery, Cucmber, Carrots, Ginger and Lime.
