What Vegans Eat – Day 1743

First Meal: Yes, this is a great morning. We started with fresh Ruby Red Grapefruits.

 
Gary made some happy cups of Teeccino topped with Soy Foam and Cocoa Powder.

 
I slow cooked Steel Cut Oats with Green Apples and Raisins and topped it with Strawberries, Pumpkin Seeds and Bananas. It’s gorgeous.

 
Second Meal: We are digging into the dry goods and frozen food now until we shop for fresh produce. Gary made one of his signature frittatas with Spinach, Miyoko’s Unlox Your Dreams Cream Cheese served with Tortillas and Toast.

 
Third Meal: Gary did a light, hold-us-over-for-a-few-days shopping. We had Crudités with Sweet Potatoes.

 
He started prepping for Thanksgiving, making Polenta Croutons for the stuffing. Here they are before being baked.

Hot drinks: We love our hot drinks. Tonight it’s Teeccino with Soy Foam and Cocoa Powder, plus a little treat, Peanut Butter Cups. We have a bag of candy in the freezer that we bought for Halloween and occasionally we dip into it.
