What Vegans Eat – Day 1756

First Meal: Buried under the Ground Flax Seeds, Walnuts and Coconut are Rolled Oats. Top it off with Soy Milk and it’s breakfast. Breakfast at 1pm. We typically start eating late in the day.

 
Second Meal: The second meal of the day is a big one with Purple and Yellow Sweet Potatoes, Baked Tofu and some leftovers. Kale and Pomegranate Salad, a few remaining pieces of Potato Knish, Carrot and Celery Sticks and what’s left of the Almond Mozzarella Cheese I made for Thanksgiving. The extra special dish was something Gary created, Cauliflower in a Tahini Sauce with Celery and Olives. It was a delicious pairing of flavors we don’t typically put together.

 
Night Cap: A cozy cup of Teeccino with Soy Foam and Cocoa keeps me going as I burn the almost midnight oil finishing a project.
