What Vegans Eat – Day 176


Breakfast: With 2 leftover Buckwheat Waffles I warmed them up in the toaster. Thinking of Gary (who is away) and how he would eat his waffles I made a peanut butter cream, simply beating water into the peanut butter until creamy and topped the waffles with it and some apricot butter.
Lunch: I made enough kale salad the night before to have leftovers today. After a luscious meal like this I always wonder why I don’t have kale salad every day.
Daily Green Juice: Kale, Collards, Celery, Lemon, Ginger
Dinner: The kale salad and green juice kept me satisfied all day. I wasn’t that hungry but finished up the Adzuki Bean Soup anyway.
