Breakfast: I had a cabbage I bought the week before. I shredded it yesterday with one head of collard greens and a onions. It made about 21 cups! I tossed a few cups with a dressing of peanut butter and apple cider vinegar and topped it with almonds. It was delicious.
Lunch: I had planned a lunch with my parents and some old friends of the family. My mother cut up fresh fruit as she always does and it disappeared quickly.
We went out to Jani’s Chinese and Japanese Restaurant in Huntington Station. I ordered the Avocado Maki.
We got back to my parents house. I brought along a flourless chocolate cake and we celebrated Edith’s 82nd birthday.
When I got home I stir fried some of the cabbage/collards mix with fresh garlic and firm tofu. I don’t use oil when I stir fry. I prefer to taste the oil if I am going to use and I drizzled a little sesame oil on top. It was delicious!
Daily Green Juice: Kale, Collards, Celery, Lemon, Ginger
Evening: A half of canteloupe made for a cool, refreshing, sweet dessert.
