What Vegans Eat – Day 178


Breakfast: A simple Rolled Oats breakfast was just the right thing with Coconuts, Figs and Almonds, served with a cool Green Kukitcha Tea.
Dinner: My friend Linda Long, author of Great Chefs Cook Vegan and Virgin Vegan invited me out to a New York Pops concert at the Forest Hills Stadium right in my own neighborhood! I offered to make dinner. We started with the Cabbage, Collards and Onion Salad tossed with a Peanut Butter/Apple Cider Vinegar Dressing and topped with Chopped Almonds.
 Next we had a warm Creamy Carrot Bisque.
  We also had some Millet Avocado Maki.
Daily Green Juice: I made a week’s worth of green juices today with Kale, Collards, Celery, Carrots, Lemon, Ginger. I sipped on one and froze the rest.
We walked to the stadium. I learned that this was the inaugural concert for the New York Pops who are making this venue their summer home. They were fabulous!
Evening: We walked back to the apartment and planned to watch Jon Stewart’s final show on Comedy Central. I served Papaya, Pineapple and Canteloupe along with Flourless Chocolate Cake and Iced Teeccino.
