What Vegans Eat – Day 1767

First Meal: We are low on food and it’s time to go out an hunt. The timing is right, I have to move the car which is parked in a Friday, no parking 11:30am-1pm spot. We are off to Trader Joe’s. It’s a Friday and everyone is here. It’s like Manhattan with the check out line wrapped around the store. What’s going on? Time to get into the holiday-over-consumption spirit! We bought the foods we like and came home. We are hungry! I set out to make the salad (grated Red Cabbage, Apples, Carrots and Onion with Ginger, Coconut and Lime Juice) and Gary prepped the Potatoes and the Tempeh Filets.

 
We made up our plates and added the condiments, Ketchup and Cranberry Sauce.

 
Second Meal: Here’s an embarrassing story. Yesterday, before we hunted for food, I was hungry and set out to make a smoothie with some things we had in the refrigerator and freezer, Strawberries, Coconut and Soy Milk. I scraped down the sides of the Vitamix with a spatula and went to the refrigerator to see what else I could add to it. I poured a little Vanilla in the top and let it whir. Only the noise was loud and clunky. It didn’t sound right. I stopped it, and looked inside. It was all blended and then I saw a piece of plastic handle. I had let the spatula in the Vitamix and destroyed it. Fortunately the Vitamix did not seem to notice! It was fine. I was in shock.How did I let that happen? I cleaned it up and ate nothing. Today, I began anew, more mindful and made a Blueberry, Mango, Coconut, Banana Smoothie.

 
We picked up a couple of bottles of organic Green Juice at Trader Joe’s. We like this mix a lot. The only downside is the plastic bottle.

 
Third Meal: We brought out the leftover from today’s first meal and did a repeat, this time with Ezekiel toast.

 
My salad is gorgeous. A head of grated cabbage makes a lot.This will last a few days.

 
We made sandwiches. They were a little like Tempeh Reubens, quite good!
