What Vegans Eat – Day 1771


First Meal: Some days I feel bottomless. Nothing satisfies my hunger. Today was one of those days. I made Steel Cut Oats with Blueberries, Apples, Coconut and Flax Seeds. We were okay for a while but hunger came back soon.

Second Meal: We sat down for open-faced sandwiches with Ezekiel Bread, Avocado and the remainder of the Red Cabbage Slaw with Apples, Ginger, Coconut, Carrots and Lime Juice. It was all very good but did it hold us?

Third Meal: A couple of hours later, feeling very hungry I made a soup. It took a while for the beans to soften in the cooking. I suppose this is why people like the Instant Pot. This soup had Garbanzo Beans, Black Eyed Peas, Lentils, Carrots, Onions, Corn and Tomatoes. We ate some and then some more.

Fourth Meal: It’s late now and never feeling sated we sat down to eat again. We had more of the Tomato Bean Soup.

Here’s what I needed all along. Peanut Butter! I took the Lundberg’s Thin Stackers, spread them with Peanut Butter and Slice Bananas. Finally, whatever my body was craving it got what it wanted.
