What Vegans Eat – Day 1772

First Meal: I have scheduled a professional housecleaning service for my mom’s home out on Long Island. When I interviewed the service I mentioned that mom is a little high maintenance. They assured me they were used to having to chat with people and that it shouldn’t be a problem. It was a problem. Apparently the cleaners have met their match when it comes to my mom. I started with them a couple of weeks ago because mom no longer cleans and now I need to be there to engage with Mom so the cleaners can work. I sat with Mom in her bedroom and fixed a few things. Then we moved upstairs when it was cleaned and made an order for groceries to be delivered. When the work was done, I made a late lunch. Yellow Potatoes, frozen Mushrooms, frozen Mix Vegetables, Onions and Dill cooked together. I was going to add Garbanzo beans but I forgot. It was still good.

 
I also made a quick dessert of frozen Bananas, Blueberries and Raspberries. Mom ate it all up.

 
Second Meal: I could not wait to get home. I was blessed with a parking spot and a delicious hot meal by Gary. There are four bottles of Samuel Smith’s Chocolate Stout waiting for me and I opened one. It was just what I wanted.

 
The dinner was gorgeous and so tasty. I “Mm’d” my way through the whole meal. We had Baked Tofu, Homemade Cranberry Sauce sweetened with Apricots, Cauliflower and a big salad of Power Greens and Arugula.

 
Treats: Tomorrow is a big day. Gary’s getting a tooth extracted. We enjoyed some hot beverages knowing that for a few days he won’t be able to have any. Teeccino for me, Mint for Gary.

 
Last week at the Vegan Cookie Swap a bunch of us shared our love for Peanut Butter and Chocolate. We all confessed that we have indulged ourselves with a spoon of Peanut Butter dipped in Chocolate Chips or pieces of Chocolate. It was on my mind and I had to do it!
