What Vegans Eat – Day 1773: Food for a Tooth Extraction

It’s been a long day already. Gary had a tooth extracted earlier today. Neither of us wanted to eat before his 11am appointment, although I made a thermos of Vanilla Black tea to bring to the Oral Surgeon’s office. Afterward I drove Gary home and then walked to our neighborhood pharmacist and grocery store to pick up things for him. My plan was to make him lots of puréed food – baby food! When I got home I started cooking. I made a quick soup for me with our leftover Rice Blend of Brown, Red and Black Rices cooked with Mushroom Powder and Ginger. When it was done I stirred in Barley Miso. It was so good, like the Two Kind Mushroom Congee I love at the Buddha Bodhai restaurants. Only this was better and organic! I will make this again tomorrow.

 
I boiled and puréed Red Potatoes, adding in a little Miyoko’s Cultured Vegan Butter. I always leave on the skins since they are organic and so nutritious. They leave nice little pink specs in the mash.

 
I baked an Eggplant (for Babaganoush), a Japanese Sweet Potato and a Kabocha Squash.

 
I also made Apple Sauce. I used Pink Ladies and left on the skins as well since these apples are also organic. They give the sauce a nice pink hue.

 
I just kept cooking. I steamed some organic Brussels Sprouts. I offered to purée them for Gary but he wasn’t interested so I ate them all myself with Yellow Mustard.

 
Here’s the Tooth Extraction Sampler Plate I prepared with Hummus, Babaganoush, Coconut Unsweetened Yogurt, Apple Sauce, Cranberry Sauce sweetened with Apricots and Kabocha Squash.
