What Vegans Eat – Day 1791

First Meal: If you’ve been reading my blog, which will soon be five years old, you will know that I love soup. You should also know that I love making soup out of leftovers which is what I did today. I took the String Bean Dish with Buckwheat and Onions added water and some beans.

 
Second Meal: Afterward I spread Peanut Butter on Celery Sticks.

 
Third Meal: It’s order-in night from Green Zenphony. Gary’s go-to dish there lately is the Bean Curd Platter Supreme with Bean Curd, Wheat Veggie Beef, Sun Dried Tomatoes, Jalapeno Peppers, Basil & Broccoli Rabe in a chef’s special seasoning. I chose the Taro Veggie Chicken a la King with diced Zucchini, Soy Protein Chicken, Black Mushrooms, Red Bell Peppers, fresh Soy Beans & Jicama sautéed in a light brown sauce, topped with Cashew Nuts and served on a mashed Taro ring. We shared Eggplant with Basil in Black Bean Sauce.
