First Meal: I love breakfasts that taste like dessert. This morning’s Breakfast Polenta was just that, topped with cooked Raisins, Raspberry Coulis, Coconut Flakes and Flax Seeds.
Second Meal: Gary’s sister Deb gifted us with several boxes of Rancho Gordo Beans last year. We just finished up our older inventory of dried beans and started on the new ones. Tonight we had Rancho Gordo Royal Corona Beans with Red Peppers, Red Onions, Kalamata Olives, Basil and Garlic. This is a serious bean. It’s huge! And delicious.
For dessert I nibbled on Pomegranate Seeds.
