What Vegans Eat – Day 1789


First Meal: We are going on a road trip to Connecticut to see a property. We like to look at homes for sale in different places, hoping one day to find the place that makes us both melt, or even just one of us. We had Rolled Oats with Coconut, walnuts, Cacao Nibs, Raisins and Soy Milk before taking off.

Second Meal: The weather was terrible! Not a good day for a drive. It was foggy most of the way there and back and rained a bit too. The property was a disappointment. We drove home sad and frustrated, another potential dream, dashed. So many places look a million times better in the ad photos than in real life. Gary drove and I served up the Celery Sticks.

Gary never at the Hummus and Falafel Wrap I brought him from Plant Wise, so it served as lunch in the car.

Snack: Back at home we went for our classic comfort snack of Rice Cakes with Peanut Butter and Apricot Butter.

Third Meal: Neither of us was very motivated to cook and we didn’t have much to choose from. I found some inspiration and made String Beans with Onions over Buckwheat. I topped mine off with Shiitake Mushrooms.
