What Vegans Eat – Day 1788


First Meal: I have to have my beans. I soaked and cooked some Pinto Beans yesterday and grabbed a small bowl for breakfast.

Then I sat down with Gary and we had our regular breakfast of Rolled Oats with Apples, Raisins, Walnuts and Soy Milk.

Second Meal: I went to visit mom today and take her to an oral surgeon for a tooth extraction. She lost a crown a couple of months ago and it took a while to get an appointment with an oral surgeon who would accept her insurance. The good news is the doctor agreed that she did not have to have the remaining tooth removed. She had had root canal on that tooth and didn’t feel any pain. We could wait and get it extracted if she ever got an infection. I wanted to celebrate and took mom to Plant Wise. We shared the Egg Wise Wrap (Roasted Tofu in Dijon Maple Glaze, Roasted Tomatoes,
Avocado Mash, Quinoa, Sunflower Dressing) and the Avocado Quinoa Salad with Arugula, Quinoa, Red Onion, Avocado Mash, Tomato, Sunflower Dijon Vinaigrette. I got something to bring to Gary too, a Hummus & Falafel Wrap with Homemade Hummus, Baked Falafels, Arugula, Tomato, Sunflower Tahini. I also ordered the Red Basic juice with Beet, Apple and Celery and shared it with mom. She went crazy over it, saying it was so sweet. She couldn’t believe it was a healthy drink.

Third Meal: Back at home Gary made a great dinner. He upgraded my Pinto Beans cooking them with Carrots, warmed up some of the Brown/Red/Black Rice blend and and the rest of the Kale and Red Onions and topped everything with a Tahini Mustard Sauce.
