What Vegans Eat – Day 186

Breakfast: It just Soaked Oats, okay? Nothing exotic or creative, just something nourishing that I enjoy eating, especially in the morning. This time I added Pumpkin Seeds, Flax Seeds and Flaked Coconut with Soy Milk and served it with Sliced Oranges and some Kukitcha Tea.

Daily Green Juice: I made my weekly batch of greens juices and the recipe is almost always the same with Kale, Collards, Celery, Carrots, Lemon, Ginger.
 
Dinner: I met my friend Raya and her gorgeous 6-year-old daughter Jade who were visiting New York from the Bay Area. I recommended the very vegan-friendly Spring Street Natural since they wanted to meet in Soho. I’ve been to this restaurant many times over the last 20 years or so and it’s never disappointed. My favorite part is the large Urn filled with hot Kukitcha tea which you may help yourself to at no extra charge. It lends a special coziness to the place. We had a lot of chatting planned so we ordered appetizers to get started. First a lovely Organic Chickpea Hummus Platter garnished with a flavorful orange pepper.

The Warm Spinach and Artichoke Dip was VEGAN! Yay! How often do you see a vegan spinach dip on the menu? It was good.

We sat by the window and by the time we got to ordering our dinners it was dark outside and inside. My dish was stunning but the lighting was not. The picture does not show how gorgeous it was: Roasted Portobello Mushroom Medallions with sautéed Morels Mashed Potatoes, Fava Beans, Sautéed Spinach, Fresh Rosemary, Mushroom Au-Jus. Yum. I was a plate cleaner.

Later we had tea at their hotel. I have a Lavender Earl Grey with Soy Milk. I don’t usually have caffeine at night but I wanted to be alert taking the subway home after midnight. I really enjoyed it.
