What Vegans Eat – Day 189

I woke up an hit the bottle right away. A bottle of chilled Jasmine Ginger tea that is! It’s another hot and humid day and the plan is to chill all day with cool foods.

Breakfast: Cool Rolled Oats with Frozen Strawberries, Flax Seeds and Coconut Milk served with a glass of Gary Null’s Green Stuff. I am not endorsing this green powder drink, I think it is just okay, and too sweet for me with pineapple juice and stevia. I bought it when I was traveling to Costa Rica a year ago and Gary was concerned I wouldn’t have green juice. Conveniently I was recording my radio show in the PRN studio where Green Stuff is sold. I used it in Costa Rica and the rest has been sitting in the refrigerator for too long. It’s time to move it out.

Lunch: I love making food in advance to eat all week long. Especially on hot days when I can eat everything COLD. I had this luscious, Creamy Cabbage Soup chilled.

Dinner: I was trying to “free two birds with one key” staying cool in the bedroom with the small dehumidifier while reading J. Morris Hicks new book 4Leaf Guide To Vibrant Health for my radio show the next day. I was getting hungry. I ventured out into the hot & humid kitchen and made a big Kale Salad with Carrots, Tomatoes, Onions and Creamy Balsamic Dressing. I brought a small bowl with me in the cool bedroom.

Evening: Gary came home!! His flight arrived close to midnight and our neighbors lent me their car to pick him up. Gary brought Veggie Spring Rolls from Khanh’s in San Jose with him on the plane and saved 2 for me. We had a late night meal on the terrace, Kale by Candlelight!

For dessert, I brought out the little cakes I had made a few weeks before with extra batter from my Flourless Chocolate Cake recipe
