What Vegans Eat – Day 191


Breakfast: We eat a lot of oatmeal. I think of oats as a blank canvas sometimes to add color and texture to. Today’s Oat Art is made with Strawberries, Nectarines, Pecans, Flax Seeds Coconut Milk and Rolled Oats. It’s as delicious as it is beautiful. I had a pot of Kukitcha Tea and Gary had some Earl Gray.
Lunch: It’s good to have Gary home again. I asked for a Kale Salad for lunch with Carrots, Onions and Tomatoes and got a lovely one sprinkled with sesame seeds and Creamy Balsamic Dressing.
We finished with a treat, my little Flourless Chocolate Cup Cakes.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
Dinner: Gary was inspired to cook after a very long day of getting back to our routine. Yay for Gary food! He made a savory Spinach Fritatta and Spicy Baked Fries.
Evening: One good treat deserves another and I made Blueberry Ice Dream. It’s basically the same as Strawberry Ice Dream only using blueberries instead of strawberries.
