What Vegans Eat – Day 203


Breakfast: I woke up STAHHHHVING! I was hungry. Gary had made up a bunch of Fruity Waffles when I was away and we had a few with Peanut Butter, Apricot Butter, Blueberry Coulis and Bananas.
But I was still hungry. And I was dreaming of the Black Bean Stew Gary had made and ate the night before when I wasn’t hungry for it.
I took a small serving with Melty Cheese Sauce, Hot Sauce and Nutritional Yeast.
Lunch: I had been missing my kale. Gary served me this regal Kale Salad with Seed Caesar Dressing.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
Dinner: It’s still hot in NYC and at 8pm it was pushing 90oF. We put the little air conditioner on in the bedroom and dined with our kind of comfort food: Tempeh Steaks, Fingerling Potatoes and Peas.
