Breakfast: Fruity Waffles are the star of another happy breakfast this week, this time with Apricot Butter in the nooks and crannies with peanut butter on top. Make a batch on the weekend and you can have happy, easy breakfasts like these all week!

Lunch: We were off to Manhattan to pick up my repaired MacBook Pro, hurray! In celebration we walked over to Beyond Sushi. We began with cool drinks – Cucumber Mint Lemonade!

This is the best and most creative sushi you’ll find anywhere, and NO FISH necessary. Every morsel is packed with color and flavor. We had two rolls: La Fiesta with black rice, avocao, chaypte, cilantro, pickled jalapeno and chili mango sauce and Sweet Mang with black rice avocao, mango, English cucumber, spicy veggies and toasted cayenne sauce. And for individual pieces I chose the Enoki with shiitake teriyaki and the Seaweed, Gary chose the Baked Tofu with sweet soy mirin and chili mango sauce.

Dinner: I started soaking some split peas in the morning and got them cooking late in the day. When I went to check on them they had magicially turned into Spicy Split Pea Soup. Mmm good! Thanks Gary!
